lemon cheesecake recipe

all of my favorite desserts have lemon: lemon bars, lemon raspberry cupcakes (recipe coming soon) and now lemon cheesecake. This recipe is the perfect balance of tart lemon and sweet creaminess all in one treat. It was super easy and only takes a few ingredients and doesn't require any baking!

INGREDIENTS
crust:
1 1/2 cup crushed graham crackers
1/3 cup granulated sugar
6 Tbsp melted butter
filling:
1 cup cream cheese, softened
1 can sweetened condensed milk
1/3 cup lemon juice
2 tsp lemon jello powder mixed with 1 tbsp water
optional: yellow food coloring
STEP 1: mix together graham crackers, sugar and melted butter. press into bottom of pan for crust and let chill for an hour or until firm.

STEP 2: beat cream cheese until light and fluffy, then slowly add in sweetened condensed milk.

STEP 3: once combined add lemon juice then jello mixture.


STEP 4: pour cream cheese mixture over graham cracker crust and let chill for 2 hours.

STEP 5: lick the bowl because the filling is just that good ;)

I made mine in a 7x11 pan but you can make in a pie crust or in personal jars. This recipe is so simple but so delicious! Serve cold and top with whipped cream if desired.Thank you for reading!
